In this study, 18 common and 15 durum wheats from Morocco were identified using Acid-Polyacrylamide Gel Electrophoresis (A-PAGE) , Sodium Dodecyl Sulfate Polyacrylamide Cel Electrophoresis (SDS-PAGE), and Reversed Phase High Performance Liquid' Chromatography (RP-HPLC), of storage proteins. Differentiation dendrograms were carried out. An unusual peak that showed up in RP-HPLC was partially characterized and shown to be a Serine-rich protein compared to the other proteins eluted at other peaks. A number of Moroccan wheat cultivars were classified according to their hardness. Durum wheats constituted a clearly defined class and the variability of Particle Size Index values among samples was not very high (26.5 - 34.0٠ However, Common wheats presented a much wider range of particle size index values (35.4 - 58.4). Using some American wheat samples as standards, we have suggested a classification of -the Moroccan Common wheats into hard and soft types. This division was corroborated by SDS-PAGE of proteins surrounding starch granules. Finally we have looked at correlations petween High Molecular Weight glutenin subunits patterns and common wheat quality. Good correlations were found between actual quality determined by objective tests and predicted quality from HMW-glutenin However, the number of samples analyzed was not patterns. important enough to allow general conclusions to be drawn.
